Spirulina Deli Dough Pizza Vegetarian

1 ball of Spirulina Deli Dough
5-6 Chesnut mushrooms, sliced
1 tbsp olive oil
Salt and pepper
2-3 tbsp tomato pizza sauce
2 handfuls grated mozzarella
1 small courgette
1/2 red onion, sliced into thin wedges
50g Goat’s or Brie or Camembert cheese, cut into slices
Fresh thyme leaves, to serve

  1. Preheat the oven to 250ºC
  2. Heat the olive oil in a frying pan over a medium/high heat and sauté the mushrooms for 8-10 minutes, until soft and caramelised. Remove from the pan and drain any excess liquid.
  3. For best results hand stretch (rather than roll out) the Spirulina Deli Dough into a 12” pizza round (see our videos for top tips and hand stretching instructions). Pre heat a heavy baking tray or pizza stone, then flour and lay pizza base out. Cook for 3 minutes until the dough is just starting to rise.
  4. Bring the pizza base out of the oven, spread the tomato sauce over the base and sprinkle over half of the grated mozzarella.
  5. Top with the caramelised mushrooms, peeled courgette, red onion, sliced cheese and remaining grated mozzarella.
  6. Place the Pizza into the oven without the baking tray, placing the pizza directly onto the oven shelf allowing the base to cook thoroughly and for crispier crusts.
  7. Cook for around 5 minutes until cheese browned and edges crispy.
  8. Sprinkle with fresh thyme leaves to serve.
