Roasted Butternut Squash Sauce
Top pizza with a trio of flavours – sweet squash, piquant pesto, and mild, buttery cheese.
INGREDIENTS
3 cloves garlic, unpeeled
1 medium butternut squash, peeled and cubed
1/2 tsp chili flakes
Salt and pepper
2-3 tbsp olive oil
STEP-BY-STEP INSTRUCTIONS
- Oven 200ºC
- Add the unpeeled garlic cloves to a large baking tray along with the butternut squash. Sprinkle over the chilli flakes and season generously with salt and pepper. Drizzle over the oil and toss to coat the squash.
- Roast for 25-30 minutes or until soft and just starting to caramelise.
- Once cooked, remove the garlic and tip the squash into a blender or food processor. Squeeze the garlic from its skin, into the blender. Use 1 clove for a milder flavour or add them all for a more intense garlic hit.
- Blend on high until smooth. Add a little water as needed to achieve a spreadable consistency.
