Roasted Butternut Squash Sauce

Top pizza with a trio of flavours – sweet squash, piquant pesto, and mild, buttery cheese.


3 cloves garlic, unpeeled
1 medium butternut squash, peeled and cubed
1/2 tsp chili flakes
Salt and pepper
2-3 tbsp olive oil


  1. Oven 200ºC
  2. Add the unpeeled garlic cloves to a large baking tray along with the butternut squash. Sprinkle over the chilli flakes and season generously with salt and pepper. Drizzle over the oil and toss to coat the squash.
  3. Roast for 25-30 minutes or until soft and just starting to caramelise.
  4. Once cooked, remove the garlic and tip the squash into a blender or food processor. Squeeze the garlic from its skin, into the blender. Use 1 clove for a milder flavour or add them all for a more intense garlic hit.
  5. Blend on high until smooth. Add a little water as needed to achieve a spreadable consistency.
